While the food in Utah might not be as diverse as it is in other Beyond Biking destinations, these folks sure know how to barbecue. Blending Native American traditions with cowboy ranch culture produces a real passion for outdoor cooking, which is why chuckwagon dinners (old-fashioned mobile kitchens) are so popular on ranches or in tourists locales. Wild game meat also holds a special place in the state cuisine and Rocky Mountain oysters is the seafood of choice.

You will enjoy unforgettable evenings of old-fashioned, outdoor fun, full of music and cowboy cookin’.We’re talking ranch-fried steaks, barbecue pork ribs and wild Alaskan keta salmon. Prime rib with french fries and fry (also known as burger) sauce is also a real western speciality. While huge in Utah, fry sauce remains a mystery practically everywhere else. We have no idea why, as it is a delicious mix of mayonnaise, ketchup, pickle relish and spices.

All the grilling comes to an end once we reach Zion, where the local cuisine is an authentic taste of Mexico – with some of the best margaritas this side of the border.

All meats taste great with a glass or two of award-winning local wine from the Castle Creek Winery in Moab. Moab is the perfect climate for growing excellent grapes, such as Pinot Noir, Merlot, Cabernet Sauvignon, Chenin Blanc and Chardonnay.

Whilst the location of our dinners are casual, whether you dine at a downtown restaurant, at camp or at your lodge, everywhere offers spectacular views of the Colorado River or Utah’s towering red rocks, so get ready to spend a little extra time taking in the view.
